All of NOLA Distilling’s products are made at our facility on Tchoupitoulas Street. The first step in distilling spirits is to create a mash. Creating a mash is the process of taking our fresh grains or sweet potatoes, adding water and heating it up. Then we add enzymes to breakdown the starches into sugars.

We add selected yeasts to the mash, and send it to the fermenter. The yeast eats the sugar and converts it into alcohol and carbon dioxide. This process can take anywhere from three to five days.

It’s time to run the fermentation through our copper, 16-plate still. We gradually heat up the still to the boiling point of alcohol where by it turns into a vapor and can be easily separated from the other byproducts of the fermentation. Our products are each distilled differently, allowing us to create unique and delicately flavored products.

Our vodka is distilled to get a pure, smooth flavor and powdery, fresh aroma.

Some things do get better with age, and that is why we will be cask aging our vodka and gins for special releases. All of our whiskeys will be aged until they have reached the perfect blend of wood aging and smoothness. Our whiskey products are aged in American white oak barrels that are freshly charred.
